(310a) Rheology of Concentrated Nanoemulsions

Nanoemulsions are metastable colloidal dispersions with a wide range of applications in food, cosmetic, and pharmaceutical industries due to their unique structural properties. Solid-like concentrated nanoemulsions can be in gel, attractive glass or repulsive glass state, depending on the interdroplet interaction. In this work, we study the rheological behavior of concentrated nanoemulsion with the volume fraction higher than 40% in the presence of excess surfactant and depletant molecules. The structure-flow relationship of nanoemulsions are examined through flow curve and oscillatory shear measurements. These results offer a foundation for controlling the properties of colloidal systems and nanoemulsion-templated porous materials.
