Transglycosylation, the transfer of glycosyl units between sugar molecules, offers a promising method for synthesizing non-digestible oligosaccharides (NDOs) with potential health benefits. This study investigates the mechanism and kinetic parameters of enzymatic transglycosylation of glucose to NDOs. We elucidate the specific steps involved in the reaction and identify the key enzymes responsible. Kinetic parameters, including Michaelis-Menten constant (Km) and maximum velocity (Vmax), are determined for the transglycosylation process. The influence of various reaction conditions, such as substrate concentration, enzyme loading, and temperature, is also explored. The findings provide valuable insights into the reaction mechanism and guide the optimization of NDO production through transglycosylation. This research contributes to the development of efficient and sustainable strategies for producing functional NDOs for nutraceutical applications.
