Whey is one of the main residues of the dairy industries, which retains part of the nutrients in milk such as lactose that can be used to generate fermentation products such as GOS. GOS are long-chain sugars with wide uses within industries whose commercial purity is close to 50%, for this purpose different strategies such as nanofiltration have been used. In this work, the optimization of the reaction-purification system of GOS from whey was carried out, using a genetic algorithm varying the initial concentration of lactose, the total reaction time, the nanofiltration operating pressure and the initial flow of whey using 3 different types of nanofiltration membranes. However, these results suggest that further separation steps need to be carried out to reach the required GOS concentration.
