Mike is the Director of Manufacturing at Oobli, a business at the forefront of the protein sweetener revolution.  At Oobli, Mike focuses on the fermentation and commercial manufacturing of sweet proteins, and also on the commercial production of sweetened products like chocolate and beverages.  Prior to his position at Oobli, Mike worked for Impossible Foods manufacturing Leghemoglobin, for BASF fermenting industrial enzymes, and for Cargill manufacturing organic acids.  He has a BS degree from the Department of Biological and Agricultural Engineering at UC Davis, and a PhD from the Department of Agricultural and Biological Engineering at Penn State.
