Program: Hershey makes candy so let’s make this fun.  While we all enjoy chocolate, the amount of work it takes to go from bean to a finished chocolate bar can be under appreciated.  This presentation will give insight into how cocoa is grown, field processed, roasted, and converted to finished products.  Ask questions, taste samples, and learn how the flavor of the chocolate products you enjoy is developed from bean to bar.

About our speaker: Hans Geyer is the subject matter expert on cocoa and chocolate for the Hershey Company.  He is experienced working with cocoa origin sourcing, plant processing, flavor attributes, chocolate applications, food safety requirements, and regulatory concerns.  Hans has a degree from Purdue University in Food Processing Engineering and a Masters Degree in Food Safety from Michigan State University.  He has over 35 years’ experience working on the production of confections for Hershey and M&M/Mars with assignments in the US, Asia, Brazil, and Europe.  His current work responsibilities are focused on managing Hershey’s technical team that supports the sourcing of food commodities.   Hans’ favorite activity at work is tasting cocoa liquor and chocolate.
