(444f) Keeping Juice Fresh and Safe

There is a growing demand for juice to be fresh. Consumers want the juice they buy to be the same as if they had prepared it themselves at home. However there is a trade off becuase the juice has to be still safe to drink. The problem becomes in how to kill damaging bacteria to the human body and still maintain the freshness.

Alfa Laval has done test work on this and we will show what the tradeoffs are. Most of work is concentrated on high acid -low PH such as orange and grapefruit juice and low acid-high PH such as apple,pear and peach. Both groups present different problems and solutions
