Phospholipids are of increasing interest for their dietary benefits. They are soluble in supercritical fluid carbon dioxide with an ethanol co-solvent and this is an attractive method for preparing extracts for use in food ingredients and dietary supplements. In this paper, solubility data are presented along with extraction profiles from selected natural sources of marine, animal, and plant phospholipids.
