Plant-based foods have grown 31% over the past two years and are on pace to increase 18X by 2030 - to a market size of $85 billion. Food makers aiming to create plant-based foods that meet the taste, nutritional, and texture properties of their more conventional counterparts are faced with challenges working with new proteins and texturizers. Designing foods that meet Organic and Non-GMO Project standards increases this complexity. PURIS aims to solve these challenges of food formulators by providing innovative plant-based ingredients that provide neutral flavor, wide ranging functionality, and unique use cases for the most challenging formulation issues. Ingredients designed from the seed up to perform in a wide range of applications from high protein ready-to-drink beverages, to bakery, to confection. In this talk we will explore some of the challenges facing food formulators in the plant-based space and how ingredient suppliers are driving innovation to fuel the growth of the market.
