The consumer is demanding new and innovative foods. We see them in the market all the time. Each food manufacturer has to constantly develop new products. In order to incur the consumer is safe in consuming these products there has to a constantly changing ways to look at how to heat treat these prosucts. What was safe for one product may not be safe for another. If a product is changed it cannot be assumed that the existing way is satisfactory.
this is a constantly changing environment that a number of parameters must be considered. These may have to considered on a daily basis. The consumer must be assured that what he buys is as safe as it can be
