I studied Food Engineering at Universidad Autonoma de Aguascalientes I finished with honors, then I studied for a Master's in Biotechnology where a project on the Effect of the addition of different sources of protein in bromatological, textural, and microbiological properties of analogue panela cheese. I worked in the food industry as Senior Research and Development of food products for 6 years, and then I started to study a Ph.D. in Biotechnology at Tecnologico de Monterrey with a thesis project on Extraction and structural modification of canola protein to obtain functional properties in the food industry.
