William T. Scott, Jr. is a PhD researcher at University of California Davis and a visiting research fellow at Wageningen University and Research. His research expertise is in bioprocess engineering, systems biology, and metabolic engineering with specific emphasis on yeast metabolism and aroma development. Prior to PhD research appointment, he was a researcher at Cacaolab BV in Ghent, Belgium working on optimizing the quality and stability of chocolate products.
